It’s a berry good morning around here! My baby slept all night long for 12 hours straight…woo hoo! When he woke me at 6am ready to play he wanted to go, go, go and now we both need some major energy. I quickly whipped together his favorite Vegan Strawberry Protein Pancakes and they were gone in minutes…duh! We both have a thing for antioxidant rich strawberries and these healthy pancakes are full of them.
My vegan protein pancake recipe is so easy you will wonder why any one would reach for a Bisquick box. The prep and cooking time take about 10-15 minutes. These dairy-free, gluten-free, non-gmo, vegan pancakes are full of nutrition with the almond flour, coconut milk, protein powder and banana and berries. A plant-based, vegan diet does not have to be all vegetables! I have so much fun creating beautiful, colorful, yummy treats for my family and this one leaves plates clean every time!
Vegan Strawberry Protein Pancakes
3/4 cup gluten-free almond flour
a scoop protein powder (I like to use french vanilla or chocolate Vega protein powder)
1 t baking powder
1 t baking soda
3/4 cup coconut milk
a large banana mashed
1 t vanilla extract
dash of cinnamon
coconut oil for baking
all natural maple syrup
1/2 cup coconut yogurt (I like So Delicious)
dash of unsweetened cocoa powder
In a medium bowl combine almond flour, protein powder, baking soda and baking powder. Whisk in the coconut milk, banana, vanilla extract and cinnamon.
Heat coconut oil over medium high heat using a non-stick pan or griddle. Add a quarter cup of the mixture into the pan and flip once bubbles pop. Cook for another 2 minutes on the next side.
Serve immediately with fresh strawberries, syrup and a dollop of coconut yogurt and a dash of cocoa powder!
