I was feeling warm and fuzzy over my colorful, juicy, organic peaches so last night I whipped up my bubbly, warm Vegan Gluten-Free Peach Cobbler for my friends who have a major sweet tooth. When I told them this perfectly tangy sweet cobbler was vegan and gluten free they were skeptical, but not once they tasted it! Every one was scraping their bowls for the last final taste, I wished I made more! This organic, butter-free, dairy-free, vegan gluten-free dessert packs a huge nutritious punch, but still tastes so rich. Did you know that peaches have been used in art since the Renaissance as a symbol of good health and the ancient Chinese considered peaches to have the most vitality? No wonder I love using peaches as much as possible in my cooking. And my baby boy adores them.

This recipe is so easy to make and requires minimal ingredients. Who has time to spend all day in the kitchen? I am all about simple recipes using the freshest ingredients. Vegan Gluten-Free Peach Cobbler

Serves 4-6
Prep and Cook Time: 50 minutes

Ingredients:

5 ripe organic peaches, chopped with pits removed

2 T natural maple syrup or agave nectar

2 t pure vanilla extract

1 T gluten-free flour (I like Bob’s Red Mill)

1/4 cup unsweetened almond or coconut milk

1 t lemon zest

1 T fresh lemon juice

1/2 cup gluten-free rolled oats

1 cup almond meal or whole spelt flour

2 t cinnamon

4 T packed light brown sugar or coconut sugar

pinch of sea salt

3 T coconut oil

Vegan Gluten-Free Peach Crumble

Preparation:

Preheat oven to 375 degrees F. Lightly coat an 8×8 baking dish with oil.

Combine peaches, maple syrup, vanilla extract, gluten-free flour and cinnamon in a large bowl and transfer to baking dish.

In a small bowl, combineĀ oats, almond meal, cinnamon, brown sugar and sea salt.

Whisk in the almond milk, maple syrup, lemon juice and lemon zest.

Add the coconut oil into the flour and mix together using your hands to create an even crumble consistency.

Add the crumble mixture to the peaches and bake for 30 minutes, until the peaches are bubbly and the topping is golden brown.

Serve with dairy-free ice cream or coconut yogurt.
