Mornings are busy times in my house. My baby boy is ready to eat and play at 6am while I am still trying to wake up! Some mornings are crazier than others especially when my baby decides to be an acrobat during his diaper and outfit changes! I certainly don’t have time to make old fashioned oats, but I do have time to open the fridge to this creamy and textured, sweet and salty, healthy and delicious concoction. That would be my Chocolate Peanut Butter Cup Overnight Oats (Vegan and Gluten Free).
This dish is so easy to make and SO yummy. It tastes just like a Reese’s Peanut Butter Cup. The mixture of peanut butter and unsweetened cocoa powder give bland oats enough excitement to last all morning. I am obsessed with sweet and salty combos, so most of my breakfast recipes consist of healthy ingredients and tons of flavor to satisfy your taste buds and stave off cravings.
I love to make these healthy oats when it’s warm out. They still pack the comfort and nutrition as warm oatmeal would without making you feel too heavy. This breakfast gets my energy going and through a power yoga class really well. It’s also really portable so I love to travel with a jar in case my babe (or I) get hungry on the road! My baby boy licks his bowl clean every tie!
Chocolate Peanut Butter Cup Overnight Oats (Vegan)
Prep and Cook Time: 10 minutes plus overnight
3/4 cup gluten free rolled oats
1/2 cup coconut milk or almond milk (I like So Delicious)
1 T peanut butter or almond butter (I love Kalot’s cashew butter too!)
1 T cacao powder or unsweetened cocoa powder
3 t agave nectar or all natural maple syrup
1 T chia seeds
1 strawberry for garnish
In a medium bowl, combine oats, dairy free milk, nut butter, cacao powder and agave or maple syrup.
Add to a mason jar or bowl and let sit in refrigerator, covered overnight.
In 8 hours, top with a fresh strawberry and enjoy!
