Morning routine is the key to a smooth start to our day, especially with an 8 month old baby. Now that this mama is getting her 8 hours of sleep, I am so much more productive in the mornings. I’ve been getting up around 6:30 to nurse and then daddy and the baby play before he goes to work. This is when I get to work in the kitchen. First and foremost is always my Enlightened Vegan Veggie Shake. Why is it enlightened? Well, it’s light on calories and heavy on brain nutrition! This green shake is so pure and nutritious, it may take a few days to get accustomed to the clean taste. I have seen incredible changes to my body and mind with a plant-based, organic, vegan diet. This shake gets my skin glowing, my energy levels high, my mind more active and my body in great shape.

I like to wash and cut my organic veggies in advance for the week. And the night before, I put most of the veggies in my blender. I use the Vitamix and am obsessed. In the morning, I add the water, ice, frozen banana and protein powder and go!

Enlightened Vegan Veggie Shake

Serves 2
Prep Time: 10 minutes

Ingredients:

2 huge handfuls of mixed power greens (kale, spinach, and swiss chard)

3 medium/large organic carrots

1 spear organic broccolette

2 organic celery stalks

2 scoops vegan protein powder (I like to use Vega powder)

1/2 frozen banana

1/2 cup organic frozen blueberries

2 T chia seeds

Handful of ice

1/2 cup water

Preparation:

Add all ingredients to blender and blend well until smooth. You may need to add a little more water to create a thinner consistency depending on your desire.
