Easy Vegan Gluten-Free Chocolate Chip Cookies

I’m a sucker for the classics…movies, cars, melt in your mouth chocolate chip cookies! And don’t get me started about my husband’s chocolate chip cookie fetish. It’s an addiction. So when we get a major chocolate craving, which is always, I stir together some of my favorite ingredients and end up with my Easy Vegan Gluten-Free Chocolate Chip Cookies.

These melt in your mouth cookies take less than 30 minutes to make and require minimal ingredients. If you don’t eat all the cookie dough, you’ll be dipping the gooey amazing bites in a glass of coconut milk in minutes! Truth! And yes, vegan AND gluten-free chocolate chip cookies are going to be your newest craving. 

TIP! If you’re making these to gift to someone, double the recipe! The first time I experimented with these cookies, my husband and I ate them all before they made it into the gift box 😉

My discerning sweet tooth has me constantly trying to recreate desserts from my childhood and perfect them into the better, vegan, gluten-free, plant-based version. And when I created these delights, I kind of felt like a kid again 🙂

Serves 20

Prep and Cook Time: 25 minutes


1/3 cup coconut oil

1/4 cup brown sugar

1/4 cup agave

1 t vanilla extract

1/4 cup unsweetened coconut milk (I like So Delicious)

1/2 cup almond flour (I like Bob’s Red Mill)

1/2 cup rolled old fashioned oats

1 cup oat flour

1/2 t baking soda

1/2 t baking powder

1/4 t salt

1/2 cup vegan dark chocolate chunks (I like to use chocolate chunks but feel free to use what you like.)

Easy Vegan Gluten-Free Chocolate Chip Cookies


Preheat oven to 350 degrees.

Line baking sheet with parchment paper.

In a medium-large bowl, whisk together coconut oil and sugar.

Mix in agave, vanilla extract and coconut milk and combine well.

Mix in almond flour, oats, oat flour, baking soda and powder, and salt.

Once the mixture turns into a dough like consistency, add in chocolate chips and fold in with spatula.

Scoop 2 T of dough onto parchment paper and space dough 2 inches apart.

Bake for 10-12 minutes, watching for light golden edges. 

Transfer to a wire rack and allow to cool for 10 minutes, allowing cookies to firm.
