The air is getting crisp and I can feel the holidays creeping around the corner! It’s sweater weather! And of course, it’s EVERYthing pumpkin right now in my kitchen. My Vegan Pumpkin Pie Chia Pudding is so healthy and yummy. It tastes just like the real thing! There is just something about this time that makes me feel cozy, at peace, and full of hope and wonder. Now that I am a mom, I am so excited to experience the holidays through my baby’s eyes. His first Halloween, Thanksgiving, and Christmas! Will he feel the magic like I did when I was little? I sure hope so.
My kitchen is starting to smell like cinnamon and spice and everything nice! As you know I make chia pudding a lot…because it tastes like a treat but it full of nutrition. My raw, dairy-free, gluten-free and Vegan Pumpkin Pie Chia Pudding gets me up in the morning! Well, actually my 9 month old gets me up, but my pumpkin pie pudding gets me fueled!
Vegan Pumpkin Pie Chia Pudding
Cook and Prep Time: 20 mins + overnight
2 cups coconut milk (I like to use Silk or So Delicious)
1 cup pumpkin
6 T chia seeds
2 T pumpkin pie spice
2 T brown sugar
1 T maple syrup
3 T pumpkin seeds (I LOVE the Coco Jo Super Seedz)
2 T hemp hearts (I love Manitoba Harvest Hemp Hearts Shelled Hemp Seeds)
In a medium bowl, whisk together coconut milk, pumpkin, chia seeds, pumpkin pie spice, brown sugar, and maple syrup.
Pour into bowl or separate jars and refrigerate covered for a few hours to overnight.
Serve in jars or bowls with pumpkin seeds and hemp hearts sprinkled on top. I like to add a dollop of coconut yogurt to the bottom of the dish and to top it as well!
