Who loves breakfast for dinner? I do! It seems like such an indulgence to have waffles for dinner or very Parisian to have eggs and omelettes for dinner. I don’t know why Americans don’t do it more often. It’s super simple and always tasty. I love making tofu dishes the way eggs are prepared. It’s so easy and soooo delish. Tofu has often been thought to be bland and tasteless, but I disagree. The taste of tofu in its natural state is really good with a subtle flavor. However, I do love a little spice in my life! And my Vegan Spicy Tofu Scramble gives me just that.
This is a great dish for weeknights, brunch, or even for your child’s lunchbox. It’s very versatile so I find myself making it a couple times a week. I never get bored of it! It’s colorful, healthy, dairy-free, gluten-free, non-gmo, and serves beautifully. What more could you ask for?! Bon Appetit!
