Who loves breakfast for dinner? I do! It seems like such an indulgence to have waffles for dinner or very Parisian to have eggs and omelettes for dinner. I don’t know why Americans don’t do it more often. It’s super simple and always tasty. I love making tofu dishes the way eggs are prepared. It’s so easy and soooo delish. Tofu has often been thought to be bland and tasteless, but I disagree. The taste of tofu in its natural state is really good with a subtle flavor. However, I do love a little spice in my life! And my Vegan Spicy Tofu Scramble gives me just that.

This is a great dish for weeknights, brunch, or even for your child’s lunchbox. It’s very versatile so I find myself making it a couple times a week. I never get bored of it! It’s colorful, healthy, dairy-free, gluten-free, non-gmo, and serves beautifully. What more could you ask for?! Bon Appetit!

Vegan Spicy Tofu ScrambleVegan Spicy Tofu Scramble

Serves 2

Prep and Cook Time: 30 mins

2 garlic cloves, minced
1 zucchini squash, peeled and sliced
1 package firm tofu
1/2 red bell pepper, chopped
2 cups spinach 
3 T chopped sweet and hot jalapenos, chopped (I like the ones from Trader Joes)
1/2 cup chives, minced
Dash of Chicken Salt (Vegan Red Pepper)
1/2 cup vegan cheddar cheese
1 avocado, sliced 
Vegan Spicy Tofu Scramble 
Heat oil in large saucepan over medium heat. 
Sauté garlic, red pepper and zucchini until golden, approximately 5 minutes. 
Add tofu and sauté over medium heat another 8-10 minutes. 
Sprinkle dash of Chicken Salt. 
Add jalapenos and spinach and cook for another 5 minutes. 
Top with vegan cheddar cheese and sliced avocado. 
You may want to serve with salsa on the side for an additional kick!
