On days when my husband isn’t going to be home for dinner, I like to keep it light and simple. A bowl of oats, banana pancakes, or my Vegan Glowing Green Fruit Gazpacho does the trick. This cool gazpacho is like eating a salad with a spoon. It feels indulgent with the chunks of raspberries, strawberries and blueberries dropped into this green machine. And my skin simply glows after eating this fruity gazpacho packed full of antioxidants, protein, and vitamins. Fresh fruits and vegetables are really the key to beauty.
Does any one else have a real obsession with pumpkin? When fall begins I pretty much try to put pumpkin in everything. So, naturally I have added it into this cold soup. It’s still so warm in So Cal so hot soup just doesn’t feel right. And, the protein powder adds some substance so you won’t go hungry and the fiber from all of the fruits and veggies will leave you feeling content and full.
It’s sooo easy to make. All you have to do is blend the ingredients together and voila! I love my Vitamix blender because it blends large carrots and other tough to blend fruits and veggies so effortlessly. And it’s super easy to clean which is a big deal for me. Who has time for complicated clean up?!
Vegan Glowing Green Fruit Gazpacho
Cook and Prep Time: 10 mins
4 cups spinach
2 large carrots, chopped
2 celery stalks, chopped
1/2 cup blueberries
1/2 cup strawberries
1/2 cup raspberries
2 scoops vegan protein powder
1/2 cup pumpkin purée
2 T coconut butter (I like Nutiva)
1 t cinnamon
Blend all ingredients (leaving a few strawberries, blueberries and raspberries for garnish).
Add small amount of water or ice as needed to blender.
Pour mixture into bowl and garnish with fresh sliced strawberries, blueberries, and raspberries.
