Miso Tofu Broccoli

Chickpea miso?! I love tofu but I like to keep my soy intake to a minimum each week. This Japanese flavored dish is absolutely perfect with a garbanzo bean based miso. You would never believe it’s not soy based! My Miso Tofu, Broccoli and Rice Noodles is one of those dinners I can whip together in less than 30 minutes. It requires minimal ingredients and it’s vegan and gluten-free! Oh, and it’s kid friendly and full of nutrition!  

I get the chickpea miso from Whole Foods. The gluten-free, organic, soy-free Miso Master from Great Earth Sun is so tasty! And it’s good for you with a large amount of vital probiotic bacteria to help out the digestive system. The fermented flavor is subtle and pairs beautifully with steamed broccoli and mild tofu.

Tofu is one of my baby’s favorite foods, probably because it is easy to eat with four little teeth and super mild. I love it because it’s light yet satisfying and you can do so many different things with it. I love getting creative with tofu!

Rice noodles are another favorite of mine. My husband who typically loves old fashioned angel hair pasta loves this noodle!  It’s very satisfying and my baby LOVES to play with it 🙂 These gluten-free noodles are perfect with the miso sauce and are so easy to make in just minutes.

Miso Tofu Broccoli and Rice Noodles

Serves 2

Cook and Prep Time: 30 mins

Ingredients:

1/4 cup olive oil
1 T fresh ginger, minced
1 package firm tofu, pressed and cubed
1 T low sodium vegan chicken salt
1/2 cup chickpea miso
3 T rice vinegar
2 T honey
2 cups steamed organic broccoli florets
1 package rice noodles

Preparation:

In large pan, heat olive oil over medium high heat.

Add ginger and cubed tofu and saute for 10 minutes, stirring frequently.

In small bowl whisk together chickpea miso, rice vinegar, honey, and a little water if needed.

Pour mixture over tofu and add steamed broccoli to pan. Sprinkle with chicken salt and stir well. Cover pan and cook another 15 minutes over medium heat.

Prepare rice noodles according to package instructions.

Serve warm tofu and broccoli mixture over rice noodles.
