Sundays usually begin with my Gluten-Free Vegan Blueberry Lemon Scones. I’ve never been a traditional type of girl, but I absolutely love this day that we have turned into a day of traditions. We listen to great music, cook delicious food, go to church and take beach hikes. Most importantly, we are together. We turn off phones and computers and just “be” and really connect. It’s the perfect way to start the week so when Monday morning comes around we are refreshed and ready to conquer the world…well, at least we try!
My blueberry lemon scones taste like such a treat with lemon tea and they are vegan and gluten-free. Easy to make and healthy are my two cooking requirements!
Best Gluten-Free Vegan Blueberry Lemon Scones
Prep and Cook Time: 1 hour
2 1/2 cups gluten-free flour
1/3 cup raw or coconut sugar
1 t salt
1 T baking powder
1/2 stick vegan butter, cold and chopped
1 1/2 cups blueberries, frozen or fresh
2 T lemon zest
2 T egg replacer
2 t vanilla extract
2/3 cup coconut milk
Preheat oven to 375 degrees. Line baking sheet with parchment paper dusted with flour.
In a large bowl, combine dry ingredients. Whisk together.
Add in butter using whisk or hands and combine until crumbly.
Stir in blueberries and lemon zest.
In another medium bowl, mix together coconut milk, vanilla extract and egg replacer.
Add milk mixture to dry mixture and stir well until a dough is formed.
Scoop dough onto baking sheet using an ice cream scooper, leaving an inch between scones.
Sprinkle with a dusting of raw or coconut sugar.
Freeze dough for 30 minutes for extra flaky scones, or place directly on top shelf of oven and bake for 30 minutes.
Let cool for a few minutes. Serve warm plain or with vegan butter or fruit spread.
