Who is getting their Christmas shopping done early this year? I am! Woo hoo! This is the first year I am feeling on schedule around the holidays. Last year I was 9 months preggers at this time, so my belly got in the way of doing just about anything…cooking, shopping, exercise, you name it! This year I am feeling festive, excited for my baby’s first Christmas and have been in the kitchen constantly. This warm bubbly comfort dessert is the perfect ending to a holiday feast. I made my Vegan Gluten-Free Apple Pie Crisp for my Friendsgiving this year and it was a hit, so I will be making it again for Christmas! My husband was wishing I had doubled my recipe on this one. And because it’s so easy to make and healthy, I will gladly make this apple goodness a holiday tradition!
I make this recipe two different ways, depending on how much time I have. When I have extra time, I will make my vegan gluten-free pie crust. Otherwise, I just grease my dish with vegan butter and pour the apple mixture directly onto the dish for a crustless pie crisp you will absolutely love!
The key to making this vegan, gluten-free dessert taste soooo good, is delicious apples! Try picking a crisper, tarter variety like Granny Smith. The sweeter apple doesn’t work as well as you may think!
I absolutely love chia seeds…they are loaded with so many health benefits, so I try to add them to as many recipes as possible. And…they add an extra texture to this apple mixture that is so dang good!
This crips takes very little time to prep. You don’t even need to peel the apples. I like to give them a rough peel for a little texture, but it’s up to you! Just core them, cut them and sprinkle them with sugar, cinnamon, chia seeds, maple syrup, vanilla, lemon, gluten-free flour and dairy-free milk.
Top with the crisp mixture which makes this decadent dessert crispy, golden brown and buttery! And let it bake away…while you cook your main dish.
And voila! In under an hour you will have a warm, bubbling, HEALTHY Gluten-Free Apple Pie Crisp to please your crowd…hopefully, leaving some leftover for breakfast!
Gluten-Free Apple Pie Crisp
Cook and Prep Time: 50 minutes
6 apples, peeled, cored and sliced
2 T natural maple syrup or agave nectar
1/4 cup raw sugar
1 t cinnamon
2 t pure vanilla extract
1/4 cup chia seeds
1 T gluten-free flour (Bob’s Red Mill)
1 t lemon zest
1 T fresh lemon juice
1/3 cup gluten-free rolled oats
1 cup almond meal
1/2 cup pumpkin puree
2 t cinnamon
1 t nutmeg
1/3 cup packed light brown sugar or coconut sugar
pinch of sea salt
3 T coconut oil
Preheat oven to 350 degrees F. Coat an 8×8 baking dish with vegan butter.
Combine apples, and all apple mixture ingredients in a large bowl.
Transfer apple mixture to buttered baking dish.
In a small bowl, combine topping ingredients (it is easier to use your hands to combine) until crumbly.
Top the apple mixture with the crumble and bake for 50 minutes, until the golden and bubbly.
Let rest for 15 minutes and serve with coconut yogurt, coconut vanilla ice cream or homemade nice cream!
