My Pumpkin Energy Oat Balls are ready and they won’t last long! When I make these yummy little balls, they are gone before I have a chance to blink. Between my husband, my one year old boy, and moi…we can go through a whole batch in a day. They are perfect for breakfast, snacks and dessert. They travel beautifully for on-the-go snacks. And they are raw, vegan, gluten-free, and oh so decadent.
I make these pumpkin energy oat balls often because they take just a few minutes to put together and I pop them in the freezer and voila, the perfect snack is always a freezer door away.
Around the holidays, add some festive sprinkles and you have a fun holiday sweet treat!
The pumpkin in this recipe adds so much potassium and nutrition. Around the holidays, I become a pumpkin-aholic. Thank goodness it’s so healthy.
And don’t get me started about my chocolate and pb obsession. There’s just something about sweet and salty!
Pumpkin Energy Oat Balls
Prep and Overall Time: 5 minutes + 1 hour in the freezer
1 cup old fashioned oats
1/2 cup +2 T organic pumpkin puree
1/3 cup raw or coconut sugar
1/4 cup +2 T melted coconut oil
1/2 cup peanut butter
1 t vanilla extract
1 1/2 t pumpkin pie spice
pinch of salt
4 T flax seeds
1/2 cup dark chocolate chips
1/4 cup unsweetened shredded coconut
In a medium bowl, combine all ingredients together and form into balls.
Place on baking sheet lined with parchment paper.
Freeze for one hour.
*These may be kept in the freezer for 3 months or refrigerated for 3 days.
