Oh beets, they’re full of fiber and vitamins and sooo rich in color. I absolutely love using beets in salads, soups, and smoothies to add tons of nutrition and vibrant color. My Blackberry Creamsicle Smoothie Bowl is plant-powered and tastes soooo dang good. It’s full of greens and fruit…and the fact that it’s hot pink just makes me happy in the early mornings. Did I mention my baby boy has been loving waking up to play at 4am this week? So, I reallllly need my smoothie bowl in the early morning hours to get me inspired and energized. You can also pour this into a blender bottle for a great on the go breakfast.
Blackberry Creamsicle Smoothie Bowl
Prep Time 10 minutes
1 frozen banana
1/2 cup blackberries
1/2 cup frozen strawberries
1/2 cup freeze dried blueberries
1 cup spinach
1 cup almond milk
1/2 cup coconut cream
2 tablespoons almond butter
Toppings: hemp seeds, dried cranberries, edible flowers, frozen berries, fresh mint or basil
Add all ingredients except coconut cream to a high-speed blender and blend well. Pour into bowls and pour coconut cream over the top,
Add your toppings and enjoy!
